Roasted Beets and Carrots with Honey Glaze

Ingredients

1 bunch of medium beets

1 bunch of small carrots

1 Tbsp. olive oil

1/2 tsp. sea salt

1 Tbsp. butter

2 Tbsp. honey

Preheat the oven to 450°

Chop the beets and carrots into 1/2 inch pieces

Toss the beets and carrots in a bowl with olive oil and salt, then place on a sheet tray spread out evently

Roast at 450° for around 25 minutes or until they are fork tender

Melt the butter on the stovetop, remove from heat, then whisk in the honey

When the carrots and beets are ready, drizzle the honey and butter glaze on top and toss until they are evenly coated

Roast for 5 minutes with the glaze, and serve
