Radish & Peas Salad

This is the perfect quick and delicious vegetable side for any summertime meal! I love to pair it with the Creamy Swiss Chard Pizza.
Ingredients
Handful of different sized radishes Fresh peas - either shelling pea (pictured here) or sugar snap peas cut on a bias
½ of a lemon for squeezing over the top
Parmesan cheese hunk for shaving over the top
Flaky salt
Pepper
Olive oil
Directions
1. Using a mandoline (carefully with a guard - trust me!!) thinly slice most of the radishes, leaving any tiny ones behind. For the tiny radishes I like to just simply slice in half
2. Shell your fresh peas or slice snap peas on a bias
3. Arrange radishes slices, halves and peas on a dish
4. Shave slices of parmesan cheese on next (I like to use a vegetable peeler to get long thick slices)
5. Squeeze lemon juice over salad and then drizzle with olive oil and then top with flaky salt and freshly ground pepper - Enjoy!
