Classic Tomato Sandwich with a little twist!

Tomatoes are my absolute favorite food and I look forward to tomato season every year! For me, there is nothing better than a classic tomato sandwich - I hope you enjoy it as much as I do!

Ingredients

  • 1 heirloom tomato 

  • ½ cup duke’s mayo 

  • ½ cup basil 

  • Squishy sandwich bread (I used a soft pullman loaf I got from a local bread vendor but I also love a classic white bread, a milk bread or brioche loaf!) 

  • Flaky salt and pepper 

Directions

  1. Make the basil mayo (that’s the twist!). Add basil and mayo to a food processor and pulse until combined - we are looking for small pieces of basil flecked through the mayo, not necessarily fully blended in. 

  2. Slice tomato - I like a thick cut, roughly an inch thick but slice to whatever your preference is! 

  3. Spread a generous layer of basil mayo on each slice. Add tomato slices and sprinkle with flaky salt and a few grinds of black pepper. Enjoy!
