Cucumber Salad

Ingredients

  • 3-4 Lemon Cucumbers - I like big chunky slices but any way you want to cut it works! 3 tablespoons kewpie mayo 

  • 1 tablespoon sesame oil 

  • 1 tablespoon rice vinegar 

  • 1 tablespoon soy sauce 

  • ½ tablespoon chili crisp 

  • 1 tablespoon sesame seeds 

  • Flaky salt 

Directions

  1. Slice cucumbers and mix with a big pinch of flaky salt 

  2. Mix together kewpie mayo, sesame oil, rice vinegar and soy sauce - you have to whisk for a bit longer than expected to emulsify the mayo with the oils 

  3. Toss cucumbers with mayo dressing, chili crisp and sesame seeds and serve immediately!
