Mom’s Cucumber Tomato Salad

This is my favorite easy side to make and requires no real recipe- just taste and season as you like! This is a classic staple that my mom would/still does make and is a great way to use up extra tomatoes/cucumbers in the summer. 

Ingredients

  • Tomatoes - cherry tomatoes, romas, heirlooms - all are welcome! 

  • Cucumbers 

  • Balsamic Vinegar 

  • Sugar (just a big pinch) 

  • Salt and pepper 

  • Olive Oil 

Directions

  1. Cut/slice tomatoes and cucumbers in whatever fashion you like. Add to serving bowl

  2. Drizzle balsamic and olive oil over and toss. Then add sugar, salt and pepper and toss. Taste and add more of anything! This keeps in the fridge for about 2 days.
