Cucumber Tomatillo Sandwich

Ingredients

  • 1 small cucumber, sliced on mandolin 

  • 2-3 tomatillos (depending on size), husked and removed and sliced on mandolin 1 package of cream cheese, room temperature 

  • 1 garlic clove, smashed 

  • Handful of cilantro, chopped 

  • 1 jalapeno, roughly chopped 

  • Zest and juice of 1 lime 

  • Squishy white bread or brioche bread 

  • Salt and pepper 

Directions

  1. Add cream cheese, garlic clove, cilantro, jalapeno and lime juice and zest to food processor and pulse until fully combined. 

  2. Toast two slices of bread and spread a layer of the cream cheese mixture on both sides. Then shingle cucumber and tomatillo slices on the bread, top with salt and pepper, top with the other slice and enjoy!
